The objective of the present study was the optimization of the nutrient medium composition for Candida melibiosica 2491 cultivation by means of mathematical methods of modeling and production of yeasts with higher enzyme capacity. An optimal composition plan was used for the mathematical description of the process that enabled the generation of linear and non-linear regression models with a minimum number of trial observations. The mathematical modeling resulted in a new composition of the nutrient medium for the phytase biosynthesis of C. melibiosica, namely: (g/dm3) fructose – 30.0; yeast extract – 5.0; meat peptone – 8.71 and KH2PO4 – 0.2 mmol, achieving an increase of cell phytase productivity with 22.5%.
