The multifactorial effect of the working pressure, milk fat and volume reduction factor on the flux of a UF25-PAN polymeric membrane under cow’s milk ultrafiltration was investigated. A multifactorial mathematical model describing the examined process with practically acceptable accuracy was obtained.
The resultant model and histogram demonstrated that the highest flux values were reached when the working pressure and milk fat were on the high level and the volume reduction factor was on the low level. This variant of combined working factor influence can successfully be applied to white brined cheese production using ultrafiltration.
