Lipid Composition of Nigella sativa L. Seed Oil

Abstract

For the first time has been caried an investigation on the oil of Nigella sativa L. seeds from the Bulgarian region. The physicochemical characteristics, sterol, to-copherol and phospholipid composition of the oil has been reported. The seeds content 37.67 % oil, 2.5 % unsaponifiable compounds, 0.9 % phospholipids, 0.2 % sterols and 177.1 mg/kg tocopherols in oil.
